Hudson & Charles is a nose to tail sustainable butcher shop located in NYC's West Village and Upper West Side. We are committed to a sustainable philosophy and whole animal utilization. Our animals arrive to our shops whole (lamb& goat), split (pig) or quartered (beef and is 100% grass-fed). All animals are sourced from small local family owned and run farms in New York State and Pennsylvania. Our farmers raise their animals antibiotic free, hormone free and steroid free on farms using regenerative agricultural techniques.
Job description
We are looking for a butcher's apprentice who will learn the craft of whole animal butchering from the ground up. We will teach you the art of whole animal utilization and everything that surrounds it. This is a great opportunity for someone to grow with us and get involved in helping to support the local food economy. We are ideally looking for a candidate who is seeking long term company growth.
We are seeking an apprentice for a FT schedule of 40 hours a week. This is a PAID apprenticeship.
It doesn't hurt to have a sense of humor, a good attitude, comfy shoes and be to be highly motivated and curious. Also a love of 90's music doesn't hurt.
Daily responsibilities include:
Unloading deliveries
Assisting the butcher with trim work, grinding, counter
Organizing the walk-ins
Assisting in kitchen prep
Assisting in sausage prep
Help filling customer orders for pick up and delivery
Customer service
Requirements:
40 hours/week
basic knife skills
1 year commitment (you don't learn this craft in 3 months)
Ability to lift 100+ pounds
